This International HACCP Alliance approved course provides instruction for creating a risk assessment plan based on the HACCP approach for controlling food safety hazards.
Learning Objectives:
- Create a risk assessment plan for on-farm operations
- Review GAPs and GMPs (i.e. microbial risk, water quality, sanitation, and storage)
- Learn about updates to regulatory requirements and buyer requests for: new FSMA rules, Produce GAPs Harmonization Audit (USDA GAP), and GFSI level programs such as GlobalG.A.P. and SQF. (not included in the on-line, self-paced course)
- Satisfy the training requirement for Global Food Safety Initiative (GFSI) standards such as GlobalG.A.P., PrimusGFS or SQF.
Who Should Attend:
On-farm food safety managers, packinghouse, sanitation team members, supervisors, managers, and any industry members needing a better understanding or a refresher of GMPs,GAPs and fundamental food safety programs.
Prerequisites:
None. This is a basic food safety training.

Take up to one year from date of registration to complete this course. Progress through 12 learning modules narrated by the instructor. Topics include: Importance and history of Food Safety; Identifying and Controlling Hazards; Personnel Practices, Hygiene, Agricultural Water, Soil Amendments, Animal Activity, HACCP Preliminary Steps and Principles. Please note that the Produce Safety Rule is not presented.
Module quizzes reinforce your knowledge and retention of the material and may be retaken to improve your score. The final exam is based on module quizzes.
